When you combine our dip mix with mayo to use as a dressing for potato salad, the pesto flavors pair perfectly with cubed prosciutto or ham and sliced green onions. The lemon gives it a freshness that is amazing. Add crumbled gorgonzola for a truly unique salad. Make it with mashed potatoes in the Southern tradition (pictured), or diced potatoes. If you're serving ham for your main dish for Easter, consider replacing the ham/prosciutto with cooked shrimp or smoked chicken for added variety.
