A totally new comfort food flavor was inspired by spices from India that are usually used for lentil soups.  This mix was developed for those who want something to dip into that isn't made from mayonnaise and sour cream or cream cheese.  Turn any mashed veggie into a dip by adding Madras Dip Mix and a little olive oil.  Serve with potato chips, pita chips or crackers for a completely vegetarian dip.  Madras Mashed Carrot Dip with Baked Pita Chips for dipping (pictured) is lovely accompanied by white wine.  This is the perfect vegetarian appetizer for your party fall guests.

TIP:  Use fresh, frozen or canned veggies.  If using canned veggies, drain very well or dip will be watery.

OTHER TASTY VEGETARIAN WAYS TO USE THIS MIX:

Vegetable Sides:  This dip mix also does double duty as a seasoning for vegetable sides.  It's beautiful with grilled or roasted fresh veggies (pictured with roasted yams and baby beets).  Toss veggies with olive oil, sprinkle on some mix and roast.  You’ll have a great, original fall dinner party side dish with these roasted vegetables.

Vinaigrette Seasoning:  Add the mix to your favorite vinaigrette or see RECIPES for our vinaigrette made with this mix.  Then use it to dress green salads, and vegetable or pasta salads.  Madras Mediterranean Pasta Salad is pictured.  Whether you are using these salads as side dishes or a main dish, the flavors compliment most any cuisine.  The pasta salad is great for fall party buffets.  See SALAD RECIPES for directions. 

Hummus Seasoning:  Serve Madras Hummus with fresh raw veggies (pictured) like yellow squash or sugar snap peas to offer a dip that is 100% vegetarian, gluten free and has almost no calories!  Just don’t tell your guests it’s actually good for them, and it will be the hit of the party for those who don’t like spicy.  See RECIPES for directions for hummus.

Other Side Dishes:  It does amazing things for the finished dish when added to the cooking liquid for orzo, couscous or rice pilaf.
