Raspberries and chocolate - a combination that must have been made in heaven.  Especially in this luscious mousse!  Easy for both casual and formal entertaining.  Layer mousse with brownie bites and fresh raspberries in an individual Raspberry Chocolate Trifle (pictured).   Make this an elegant dessert by serving with champagne (pictured).

Cream Puff or Cannoli Filling:  This mousse is completely decadent as a filling for Raspberry Chocolate Cream Puffs or Raspberry Chocolate Cannoli (pictured).   TIP: Prepared regular or mini size cannoli shells can be purchased online, at specialty food stores and at some grocery stores, including Wegmans.  They're delicious, and make this dessert quite easy.   See the READY MADE page for where to purchase ready-to-use cream puff or cannoli shells and crepés.

Tart Filling:  This mousse is totally unique and amazing as the "custard" for a fresh berry tart.  Raspberry Chocolate Berry Tart is pictured as a baby shower dessert.  TIP:  Make it even quicker and easier by using a purchased graham cracker or chocolate pie crust.

Drinking Chocolate:  This makes a dreamy “drinking chocolate” (pictured).  Sometimes called “sipping chocolate,” or European hot chocolate,” it differs from the hot coco we grew up with by being richer and thicker.  Purists insist it isn’t drinking chocolate unless it is made with chopped, melted chocolate; but ours is as rich and almost as thick when made with half and half, even the non-fat variety.  And it’s much easier and quicker our way too.  It’s perfect to sip when watching a movie, reading a book or any time you absolutely must have rich, luxurious chocolate.  See RECIPES for directions.

Small Plate/Topping:  Great as a small plate dessert topping Fresh Raspberries with Raspberry Chocolate Mousse Topping (pictured).  This is a dessert that you can feel good about.  It's so delicious no one will even notice that it's healthy too.

Double Chocolate Bites:  Double the chocolate fix by piling mousse into chocolate shells for Raspberry Chocolate Shells (pictured); they make a lovely buffet or party small plate dessert offering.   They’re really quick and easy too.  TIP:  Look for these and other chocolate shells at specialty food stores around fall and winter holidays, or on line any time.  They keep very well as long as they aren't exposed to extreme heat or cold.

Easiest Presentation:  Serve Raspberry Chocolate Mousse in a martini glass with a dollop of whipped cream (pictured).  Make this even more elegant; serve with champagne.
