The fruit preserves reinforce the flavor of whatever fruit is chosen for the salad. Absolutely amazing on field green salads with chicken, (salmon or smoked turkey too), red onion rings and dried, canned or fresh fruit (apricots, cherries or whatever is in season or in your pantry). Celebrate Cranberries: We’ve created a new salad to celebrate cranberry season, but there’s no reason not to enjoy this combination year round. We’ve used chicken, Crasins® and scallions for our salad ingredients. We used cranberry sauce (instead of preserves) in the dressing. The result is a delightful, beautiful dressing that can be mixed with mayo & buttermilk to dress a tossed salad, or mayo only to serve either chicken salad mounded on a bed of lettuce or as a sandwich filling. Mayonnaise Dressing Recipe: Substitute extra mayonnaise for buttermilk to make incredible chicken, tuna, shrimp or crab salads. Match the preserves you mix into the dressing to the fruit in the salad or sandwich filling. This gives you the most versatile options and delicious dishes ever. This is also a good leftover turkey recipe using apricots or peaches, and a good leftover ham recipe using cherries or pineapple.
TIP: If you can’t find pineapple preserves, use pineapple sundae topping to taste.
