Almost like a trip to the Caribbean, our Tortuga Bay Salsa Mix is designed to take fruit to the next level.  It combines the tastes of traditional jerk seasoning with rum and mint flavors.  

In the summer when fresh fruits are less expensive, we often go to a fruit mix; virtually any fruit combination works, so use your favorites!  The Caribbean heat and flavors are beautifully complimented by cool fruit, surprising but delicious in a fruit salad.  Tortuga Bay Mixed Fruit Salad with strawberries, blueberries and honeydew melon is pictured.  It’s a wonderful side dish for July 4th cookouts.  Here’s the whole recipe.

TORTUGA BAY MIXED FRUIT SALSA RECIPE 

Ingredients
Your favorite fruits, up to about 4 pounds total.
Enough water to cover fruit.
1 package Tortuga Bay Salsa Mix

Directions
Combine salsa mix and water.
Pour over fruit & refrigerate at least an hour, or preferably over night.

To Serve
Drain fruit and place in serving bowl.
Garnish with mint sprigs if desired.

For the mixed fruit salsa pictured, we used mango, cantaloupe and honeydew, and added red peppers and green onions.   We serve it either with tortilla chips or as a relish for grilled chicken, pork or fish.  Served either way it will be a definite hit at your 4th of July party.
