TIP: Look for these and other chocolate shells at specialty food stores around fall and winter holidays, or on line any time. They keep very well as long as they aren't exposed to extreme heat or cold. Pair a flute of champagne with the tuxedo “bowls” (pictured) to extend the “formal” feeling.
For casual summer parties or brunch, mousse topped waffle bites (pictured) are another “small bite” idea. They’re fun, easy to fix and quite original. TIP: Use frozen waffle bites heated in a toaster oven until crispy. Serve them warm (not hot) so they don’t melt the mousse. Or serve with French Toast Sticks with the mousse for dipping.

Cannoli Filling: Cannolis are traditional crisp Italian pastries made in tube shaped shells with a filling typically made with ricotta cheese. Cannoli shells make lovely "containers" for this luscious mousse. Traditional Orange Chocolate Cannoli are pictured: mini cannoli shells have been filled with mousse and drizzled with chocolate syrup; chopped candied orange pieces dot the open ends for extra garnish. Easiest Way To Serve: Pile mousse in martini or cordial glasses (pictured). It’s just the right ending for a summer party. Top simply with a dollop of whipped cream or garnish with chocolate sprinkles or pearls.
